Italian Grilled Chicken

Ingredients:

Chicken breast

Trimmed and skinned

Italian herbs
|

Garlic
|
Minced
|

tbsp.

Blended oil
|
Olive and canola
|
|
|
Salt, kosher
|
As needed, to taste

White wine vinegar

Optional/just a splash, and only during the last ½ hour.
|
Directions:
- Mix the Italian herbs, garlic, and oil. Add salt and taste. Pour over the chicken and marinate for 1/2 an hour.
- Pre-heat oven to 375°F. for convection and to 400°F. if conventional.
- Heat a cast iron griddle-skillet, over high heat. When a little smoke starts to show, lightly grease the griddle skillet with *oil.
- Grill the chicken; 2 minutes on each side.
- Transfer to a sheet pan, lined with a rack, and take to the oven for about 10 min. or when internal temperature reaches 165°F.
