Kale and Bacon Salad with a Lime Vinaigrette
Great way to enjoy Kale, marinade it the heck out of it!!! Kale is bitter by nature, but is very good for our health. Apart from making smoothies out of it, where we actually mask the flavors relying in sugar and the sugar that the other ingredients contains naturally. Instead use the bitter of the kale to add a contrast taste in your salad. Remember that the best tasting food will come from combining Saltiness, Sweetness, Sour, Bitterness and Hot Spicy.
1 head of kale, vain stripped and slice thin
Tomatoes, large diced, no seeds
4 oz Bacon, cut in strips and rendered, but not crisp
1/2 Lime Juice
1/2 Tbsp Red Wine Vinegar
1 Tbsp Honey or Agave
1 garlic clove, minced
1/2 tsp regular mustard
3 Tbsp Canola Oil
Place salad ingredients in 3 different bowls.
Make Dressing by combining all ingredients, but oil in a bowl and then mix them with a whisk, then add the oil in to the bowl by emulsifying it.
Drizzle dressing over kale bowl and toss. marinate for at least 20 minutes, then add the tomatoes and serve with Bacon on top.
