American Frosting, recipe from Cakes & Cake Decorating from Hermes House Publisher
This frosting is excellent for any cake, I do it when I have no time or when need it. This recipe is a transcript from my book at home. One great thing is that the recipes are very accurate and this one recipe can cover a full 9 inch round cake. The amount of frosting that the recipe yields is 12 oz.
1 Large Egg, room temperature
2 Tblsp water
1 Tblsp Golden Syrup
1 tsp Cream of Tartar
1 1/2 Cups of Powder Sugar, sifted
1. Place the egg white, water, golden syrup and cream of tartar in a heatproof bowl. Whisk together until thoroughly blended.
2. Stir the icing sugar into the mixture and place the bowl over a saucepan of simmering water. Whisk until the mixture becomes thick and white and holds soft peaks.
3. Remove the bowl from the saucepan and continue to whisk the frosting until cool and thick, and the mixture stands up in soft peaks.
4. Use immediately to fill or cover the cake. Once iced, the cake can be decorated in any way you like, such as with chocolate curls.
After you mix all ingredients together and you place the bowl over the double boiler, use an electric hand mixer to continue the whisking. The final product will be easier to achieve. In the book they do not exactly say this, but he picture showed the use of an electric mixer.
