Salsa Criolla

Salsa Criolla, to eat over your favorite dish, specially over beans.
Salsa Criolla is what Peruvians it over most of our dishes, it is also a great topping for your good old hot Dogs, Sausages, Hamburgers, Roast Beef Sandwich, etc.


1 large Red Onion (thin julienne)
1 lime or Red Wine Vinegar (a splash) LIME IS BETTER AND TASTES FRESH
Salt, to taste
Fine Ground Pepper, to taste
Chopped Cilantro or Parsley or a combination of both, to taste
Canola or Olive Oil, as need it


1. Slice the onions and place them in a bowl, add cold water to cover completely, add at least 1 tsp Salt. Allow to sit for at least 30 minutes.

2. Rinse and drain all water, make sure to wash out the salt, do not brake the onions.

3. Season to taste with the rest of ingredients and  just a little of the oil (about 1 tbsp)


* Add Roma tomato wedges (seeded)
* Make it a salad, add not just the tomatoes but also slice lettuce, or maybe cucumbers.
