Manuelito's Onion Relish

It was long ago that I learned to do this "Salsa de Cebolla", as a good replacement of our regular "Salsa Criolla". Manuel Del Alcazar, my husband's grandfather, he taught it to me with all and his little secrets; funny thing was that a little after he forgot he did and he told me that I had been spying on him to copy his famous "Salsa de Cebolla"; I assure him that he gave me the recipe, but he was not convinced of it. Abuelito Manuel, like my girls called him, was already getting old those days, but the same as my mother in law , he was an excellent cook of our Creole Cuisine; I am positive that he is now cooking in heaven because he enjoy it a lot.


1 large yellow onion ( thin julienne )
1 tsp Salt
Oil, 4 Tblsp
White Wine Vinegar, 1 Tblsp
Granulated Garlic, 1 tsp
Dried Parsley, 1/2 tbsp
2 pinches of Cumin
1/2 tsp Sugar
Salt, to taste


1. Place the onions in a bowl with the salt and cold water, for at least 20 minutes.
2. Rinse the onions under running cold water, drain all the water off.
3. Return onions to the bowl, and mix in the rest of the ingredients. Toss well and allow to sit for 5 minutes before tasting.
4. Taste and adjust the seasonings, keep in a glass jar. It will last about 7 days.
