Aguadito Especial

A Peruvian broth based soup, that is perfect in the mornings after a long night of dancing having fun or just working, this soup is rich from the bones of the Turkey and is a reconstituyente, good for the recovery of a tire body, also offer to travelers. Recovery soups are a gift from French Cuisine.
Turkey (to the purpose this soup is better to use leftovers.


The carcass of 1/2 turkey, or, 1 Chicken (make sure that there is still some meat in those bones)
oil, as need it
1 medium yellow onion (small diced)
1 Tblsp minced garlic
2 Tblsp Aji Amarillo
Cilantro Paste (check on recipe)
Pisco or beer (optional)
12 Cups stock, use water if you have plenty time for simmering and if there is some nice bones in your soup.
Aji Mirasol, whole
1/2 Cup White Rice
1 red pepper ( small diced)
1 large carrot (small dice)
1 Cup green peas
1/2 Cup corn
2 medium Idaho potatoes (medium diced)
salt and pepper, to taste


1. In a heavy  pot warm the oil and start Browning the onions, but is more like sweating, add water as necessary, don't let them burnt, in short words make a Sofrito. When the onions are soft and translucent add garlic and the Aji Amarillo paste. let this cook for about 3 to 5 minutes stirring constantly.
2.  Cut up the turkey, if using some bones try to cut those up also, this will help the collagen dissolve into the liquids faster. Add this to the pot and mix well with the Sofrito add a little water and cook for 10 minutes.
3. Add the beer or Pisco, stock, cilantro paste, and let the pot get to a boil, bring down to simmer, when you feel that the soup have a nice rich taste from the meat and bones proceed to add the rest of ingredients. Don't over cook the rice or the vegetables. Remember the vegetables are your vitamins if overcooked you are disappearing them, add them in a timely manner so that all the ingredients finish cooking together.
4.  On the last 10 minutes of cooking,  place the Aji mirasol right in the center of the pot. bring out when done.
5.  Remember this soup is a Broth based soup so the ingredients in it should sort of float in the nice rich green broth, enjoy at anytime of the day.Specially after a bad night.
