Broiled Pesto Chicken
Ingredients:
3 Chicken Thighs (prep chicken, cut out excess of fat)
2 Tblsp Pesto Sauce
1 Tblsp Olive Oil
White Wine Vinegar
Salt, to taste
Sugar, to taste

Preparation:
1. Place the chicken on a bowl, and with a stick pock holes in the chicken.
2. Place all the other ingredients on a small bowl, mix and taste to adjust seasonings.
3. Marinate the chicken with the pesto mixture for at least 20 minutes, no more than 40.
4. Set Broiler to low, if not broiler, set oven to the highest possible (500*F)
5. Place chicken in oven for 10 to 15 minutes, then lower to 350*F, until chicken is ready.
If your stove have a good broiler, broil on low, and on high for the last 5 to 10 minutes.

Save some of the pesto and make a simple sauce (like a Bechamel or an Allemande sauce) and finish the sauce with the pesto, drizzle chicken with sauce.
