Arcentales's Fruit and Marshmallow Christmas Salad

First Things First, I tried for the first time this salad at my mother's in law, this is the salad that she made for Christmas, there hasn't been a Christmas since then without this Salad. It is my kids favorite as it was their daddy. My two Jose's like it so much that they always fight for the last portions. They both ask me to make the salad 6 months earlier. Many thanks to my mother in law for always sharing my her Son's Favorite Food Recipes. Use it in Christmas, or during a picnic.


2 C. Pineapple Tidbits (drained)
2 C. Diced Peach in light Syrup (drained)
1 C. Peeled Grapes, or Halted.
3 egg yolk
2 Tblsp. Sugar
2 Tblsp. Apple Cider Vinegar
1 Tblsp Butter
Pinch of Salt
2 Tblsp. From the pineapple juice
For the Whipped Cream:
         1 Cup of Whipping Cream
         1/8 Cup of Powder Sugar
         1 tsp. Gelatin Powder (knox)


1. Drain all fruit and place on a bowl.
2. Boil water in a small pot.
3. In a large bowl ( that will sit on the pot with the boiling water) (a Bain Marie) mix egg yolks, vinegar, butter and sugar with a whisk.
4. Cook the mixture on the Bain Marie, until it looks like a pudding.
5. Add the pineapple juice,and the salt, thicken it again.
6. While warm, add 1 Cup of the marshmallows, and stir with a spoon. Don't let them completely melt, get the bowl out of the heat.
7. Add the rest of the marshmallow and immediately incorporate the mix into the bowl of fruit and mix thoroughly.
8. Place on a rectangular Pyrex. Cool for 2 hours.
9. Make a Stabilized Whipped Cream: Beat Cream, when getting thicker incorporate 1/8 Cup of Powder Sugar, keep beating until it forms picks and add the melted gelatin into it while still mixing.
10. With folding movements incorporate the cream into the salad. Decorate with maraschinos cherries, cover, and refrigerate until next day.
