Alfredo Sauce

Alfredo Sauce, is an easy way to make a rich sauce in very little time; it can easily be a Gluten Free Sauce, because thanks to the low amount of flour that is used to make it, it is possible to change it for another thickening agent.
Even so Alfredo Sauce is easy to make, what it is hard, is that many cooks have their own way to do it and they all defend their way. I will tell you mine and I really hope you like it.!!!


3 Tablespoons    Butter
2 Tablespoons    Flour
2 Cups                Heavy Cream (warm)
1/2 Cup              White Wine (your favorite)
To Taste             Salt and Fine Ground Pepper
2 pinches            Nutmeg
1/4 Teaspoon      Granulated Garlic


  1. Heat a heavy bottom stain steel pot, and melt the butter, add the flour mixing quickly to make a roux.
  2. Add the cream, while stirring constantly. When it starts to attempt to boil, add the wine, allow the cream to thicken lightly while stirring constantly. 
  3. Season with salt, pepper, nutmeg and the garlic.


  • I love this part, because what I gave you above is the base for many sauces, same as you have with a mother sauce, Alfredo sauce is your base as well. I will give you some suggestions, but if someone have some other, please do comment I love trying new ways!!!
  • Gorgonzola Sauce, at the end add about 1/2 Cup of Gorgonzola, and whisk constantly. 
  • Alfredo Parmesan, at the end mix in the Parmesan, be careful because if you add the cheese, because if the sauce is not warm enough and is still to thin, then the cheese wont melt in correctly and it will curd.
  • Pesto Alfredo, super yummy. Just add pesto to the sauce and mix. With the stove off.
  • Garlic Alfredo, Mince garlic and sofry in olive oil and incorporate the last minute of cooking time.
  • Roasted Garlic Alfredo, even better.  Toss the garlic heads in olive oil and roast at 350*F . To check if it is done, pinch with a stick, should be soft and the look of the garlic will be golden brown.  Mush with fork or small food processor and mix into your sauce. THE BEST !!!
  • Charred Roasted Pepper, either make a paste or chop it and then mix it in.
  • Spinach, either chiffonade it or wilted, chop it and whisk in.
  • Add different  Cheeses.
  • etc.
