Torta de Huevos Rancheros y Salchichas
A torta is a sandwich that is usually spread with re-fried beans and sour cream, it offers a complete on the go lunch. Remember the Chavo del 8, and his tortas de jamon? (Ham Tortas). I can still remember Kiko giving Chavito an empty Torta. The bread alone for tortas is yummy, is usually crusty on the outside and light inside, like a french bread but rounded like a large dinner roll. Here I made it with eggs and hot dogs for a full-filling Breakfast.
A funny fact !! in Peru, Torta means Layered Cake.
Ingredients
2 long subway bread3 sliced thin hot dogs
1 diced tomato
1 tsp minced jalapeño
4 eggs, lightly beaten with 2 tbsp heavy cream
1 Tblsp chopped cilantro
1 Tblsp shredded cheddar cheese.
Re-fried Beans, as need it
Sour Cream, as need it
Preparation:
1. Heat a sauté pan, add olive oil.2. When pan is hot, add the hot dogs, when they look nice and gold incorporate the tomatoes and jalapeños, sauté for a little bit.
3. Incorporate the eggs and scramble continuously, in a folding in motion, turn off.
4. Add just a little of shredded cheese and the chopped cilantro.
5. To assemble, cut the bread in half and slice open, spread the bottom with re-fried beans and the top with sour cream. Place the rancheros eggs on top of the beans and sprinkle with your favorite hot sauce.
