Chicken and Vegetables Calzone

A Calzone is an italian specialty, is consider by many a folded pizza, other just refer to them as an Italian Filled Oven Bread. For me the name Calzone is my favorite. I always conpare them to Empanadas becoose of their shape, but Calzones are I think a little more versatile to receive a wide variety of fillings, as well as they are more fullfilling.
Funy Note, the translation of the word Underware in spanish is Calsones, wich in sound is the same as Calzones. 


1 batch of Pizza Dough
1 Cup Blanched Broccoli, small chopped
1 Cup Blanched Carrots, small chopped
2 Cups Cooked Chicken, small diced
2 Cups of a thick bechamel
Shredded Mozzarella Cheese, as need it
salt, pepper and granulated garlic to taste.


  1. After the punching down of the dough, portion the dough into 8 equals parts. Round each portion into a small ball and allow it to bench for at least 15 minutes.
  2. In a large bowl mix the bechamel, vegetables, and chicken, season and reserve.
  3. Stretch each ball into a thin circle and place the filling and cheese in center, close and pinch the sides together.
  4. Oven on at 400*F 
  5. Place in a sheet pan lined with parchment paper, and make an egg wash, and brush the Calzones heavily.
  6. Take them to the oven for about 20 minutes. Make sure to rotate the sheet -pan after the first 10 minutes.
