Raspberry Marmalade

Blackberry Marmalade
A great accompaniment to toasts, crackers, brie cheese, etc.
Recipe adapted from 160 Jam Recipes
Makes or Serves
Prep Time: 15 minutes
Cook Time: 30 minutes
Ingredients:
24
oz.
Frozen blackberries

¼
tsp.
Cardamom


pinch
Nutmeg

tbsp.
Lemon juice

5
tbsp.
Apple cider vinegar

3
cups
Sugar

Directions:
1.     In a large bowl toss all ingredients with the cardamom, nutmeg, lemon juice, and apple cider vinegar.
2.    Cover with the sugar and set aside overnight.
3.    Sugar should have melted a little or totally melt depending on the amount of fruit.
4.    Transfer to a heavy bottom pot or a copper pot if available. Cook over high heat at the beginning and when the mixture starts boiling, bring down the heat to a fast simmer.
5.    Stir constantly until we can scrape the bottom from side to side with a wooden spoon and we can see the bottom of the pot.

6.    Place preserves on a jar. Canned if wanted and if you have more than 2 containers it is recommended.
