Italian Grilled Chicken

Ingredients:
4
5-oz each
Chicken breast
Trimmed and skinned
1
tbsp.
Italian herbs

1
tbsp.
Garlic
Minced
2
tbsp.
Blended oil
Olive and canola


Salt, kosher
As needed, to taste


White wine vinegar
Optional/just a splash, and only during the last ½ hour.

Directions:
  1. Mix the Italian herbs, garlic, and oil. Add salt and taste. Pour over the chicken and marinate for 1/2 an hour.
  2. Pre-heat oven to 375°F. for convection and to 400°F. if conventional.  
  3. Heat a cast iron griddle-skillet, over high heat. When a little smoke starts to show, lightly grease the griddle skillet with *oil.
  4. Grill the chicken; 2 minutes on each side.
  5.        Transfer to a sheet pan, lined with a rack, and take to the oven for about 10 min. or when internal temperature reaches 165°F.
