Guacamole

Ingredients:

1/2 White Onion, brunoise cut and brine in salt for 10 minutes
1 Tomato, Roma. Seeded and Small Diced
1 Jalapeño, seeded and brunoise cit
2 Tbsp Cilantro, Chopped Fine
1 large Avocado, ripe mashed with fork
2 Tbsp Sour Cream
1/4 tsp cumin
1/4 tsp oregano, crushed
Lime, to taste and enough to keep the color
Tabasco, to taste
Salt and Pepper, to taste
