Cucumber and Red Bell Pepper Salad


A perfect Summer Salad, with a kick !!!
Great for as a starter, snack, or as an accompaniment to meats.
I will not specifying amounts in this recipe; because is not necessary, all ingredients should be added according to taste and in proportion with the amount of salad you will be doing.


Cucumber and Red Bell Pepper Salad

Cucumbers, Peel and Slice Thin
Red Bell Peppers, Slice Thin

Place in a large bowl and add the following ingredients:
Avocado Oil
Cumin
Garlic Oregano
Pequin Peppers

Peeled and Slice Cucumbers (thin)
Red Bell Peppers (sliced thin julianne)
Dressing
Pequin Pepper
Chili Powder
Peruvian hot red peppers (aji colorado)
Avocado Oil
Canola Oil
Cumin
Garlic
Oregano
Cilantro water
Red Wine Vinegar
Oil, to emulsify the dressing
Salt and Pepper
When done tossed with cucumver and peppers.
At least 15 minutes before time.

I am not specifying amounts, because is not necessary, all ingredients should be added according to taste and in prpportion with the amount of salad you will be doing. I had 2 cucumbers and half of a large pepper. Used about half to 1 tsp of each ingredients exept for de salt and pepper and the emulsifying oil, that was as needed and to my taste.
