Spicy Italian Chicken Caesar Salad Tossed with Homemade Creamy Caesar Dressing



Italian Grill Chicken

4 Chicken Breast
2 Tablespoons of Olive Oil
1 teaspoon Italian herbs
1 Tablespoon minced garlic or equivalent granulated garlic
Salt, to your taste
Splash of white wine vinegar

Making the Chicken

1. Mix all the seasonings and herbs, taste the salt. Add the chicken and marinate 1/2 hour.

2. Pre-heat Oven to 375*F for convection oven or 400*F for conventional oven.

3. Heat either a cast iron griddle, a regular grill, or a heavy bottom pan. (Griddle or grill is best)

4. When the griddle really hot. Grill your chicken on both sides, procuring the markings is the best.

5. Then transfer to oven for approx 10 minutes or internal Temperature of 165*, cool Chicken.

6. Small Dice the chicken and place in a bowl, add a couple pinches of crushed pepper, a small pinch of Italian herbs season with salt and toss to mix well.


*IN THE CASE THAT YOU DO NOT WANT TO COOK YOUR OWN CHICKEN, GET A GOOD ROTISSERIE CHICKEN (I LIKE COSTCO'S), AND FOLLOW RECIPE DIRECTIONS AFTER THE LINE OF COOLING THE CHICKEN.

Creamy Caesar Dressing

I am not a fun of anchovies, but you can add 1 or 2 and blend it in, do not add salt until the end when using the anchovies, because they are very salty

1 Cup Mayo
1/2 Cup water
1/2 Cup ground Parmesan cheese
1 Teaspoon freshly ground pepper
1/2 Tablespoon white wine vinegar
Zest of 1 lemon and lemon juice, to taste, about 1/2 Tblsp
1/4 to 1/2 Teaspoon Worcestershire  

Mix all ingredients with a whisk until the dressing is homogeneous. Taste and season with salt.

For 1 portion of salad:

1 Cups Romaine lettuce, roughly chopped.
1/4 Cup Homemade Croutons
2 Tablespoons Parmesan Cheese, I used the grounded Parmesan it does the trick, but it is best to use the shaved Parmesan, though is expensive.
1/2 Cup Chicken
1-3 Tablespoon Dressing. (Up to you)
A Pinch or 2 of crushed peppers, optional

Toss all together right before serving.
