Mama Julita Soup


This is the soup that heals not just an upset stomach or a cold, but it also heals a broken heart and a rainy day. It brings back my mom to me, and the love she gave me and in the same way this is the soup that has work for me to give to my kids. And from now on, they will have the recipe that will help them heal their own wounds and in time given, their own off spring will be not just eating it but making it. Thanks Julita.

Ingredients:

1 Chicken Breast (diced)
1 Small Yellow Onion ( small diced)
1 tsp granulated garlic
1 tsp oregano
Aji Colorado and/or Paprika, to taste
Salt, to taste
1 celery stalk (diced)
2 carrot (diced)
2 small potatoes (diced)
1/2 Cup White Rice
2 to 3 quarts of water or stock
3 eggs
Evaporated Milk or cream (as need it)

Preparation:

1. In a large heavy bottom pot, heat the oil, and quickly fry the chicken; sprinkling some salt and pepper over it. Remove and reserve, do not worry about cooking the chicken thoroughly,  only give it a nice color.

2. Using the same pot and adding more oil if need it, make the Sofrito. Once Sofrito is done incorporate the oregano, the paprika and/or aji colorado. Stir together for about a minute. Immediately add the vegetables, potatoes, rice and liquid.

3. Add salt to taste and allow the liquid to boil until potato and rice are cook.

4. Bring the pot to a simmer. Break the eggs into the pot, with out mixing them. Only break each yolk at the time of placing them in. Do not disturb the egg until is cook. Re-taste salt and oregano, simmer 1 or 2 more minutes.

5. Serve Immediately and add a little bit of evaporated milk into each bowl.

6. If desire, chopped cilantro or parsley on each bowl.

Good to know:

* Make it from the bones of 1 chicken, if doing this you will only need to use water and no stock will be necessary.
* Make it with left over rotisserie chicken, if so, make sure to use stock or court bouillon for the cooking liquid.
* Vegetarian Version, use a vegetable stock. Avoid the chicken and incorporate other veggies, like diced banana squash, green beans, etc.
* if having cramps, use more oregano and eat while really hot.
* a nice variation is to interchange the use of rice with the angel hair pasta. Incorporate pasta when potatoes are almost done.
